In 1946, Nikolaos Zacharias founded his winery and later his son, Athanasios Zacharias, renovated the facilities. The winery was upgraded with modern technology equipment. However, Athanasios also had a passion for the art of distillation, so in 1999 he founded a modern distillery on Lost Lake (by Lake Kopaida), the first in the region of Boeotia. This has been producing tsipouro successfully ever since.

Rare but well-known varieties from the Muses Valley. The process begins with careful selection of grapes, followed by proper management of the raw material and care in the distillation process and ends with innovation and safety in the bottling process. These requirements are in line with the philosophy and goal of the distillery to produce high quality spirits with a subtle and discreet character, clean aromas, a mild sense of alcohol and a balanced taste.

One of these is the single-variety Tsipouro Malagouzia. From 100% Malagouzia grape distilled in copper cauldrons, it remains at least one year in stainless steel tanks and is best consumed at 12-15 ° C.
